Strawberry, blueberry, maple and bacon: All of the major food groups that belong on a waffle were piled on high with a touch of whipped cream during Lindsborg’s Våffeldagen (Waffle Day) celebration on Saturday. Back in 2010, organizers realized there was a lull of events around town in late March and borrowed the tradition from Sweden to spice things up. Now residents and visitors alike can stroll Main Street to meet and greet their favorite Waffle People on the way.
The White Peacock offered sugar pearl Belgian waffle topped with cream cheese white chocolate sauce and mixed berries.
Swedesinthestates.com describes the beginning of the holiday as being “traced all the way back to the Medieval times. The name Waffle Day (Våffeldagen) was from the beginning a mispronunciation of the name Vårfrudagen, which was said to be the day that the angel Gabriel came to tell Virgin Mary that she nine months later would give birth to baby Jesus.”
